Drift boat repair

Just picked up an older stealthcraft driftboat…. 



I have done crude fiberglass work on gheenoes and powerboats (roven woven), however never on a driftboat. 

Looking for suggestions on fixing a few chips on the chine.  Can I just fill with epoxy (West System G/flex or other), and add saran wrap to make a smooth edge.  Of course, sanding it down afterwards. 



Also all the wood is raw and needs to be sanded down, I am open to suggestions on which finish to use.
