So I've heard these fish are pretty awesome to eat. I've seen how they can be cleaned to be boneless. Is anyone trying to capitalize on this yet? If it's as good as I hear and they should be easy to net, we should be seeing them locally caught in the supermarket by now, but I don't. Why not? I'd love to try some. They would be safer and I'd feel better eating them then I do eating Swai and tilapia imported from Asia.

You can get them fresh at the K and S International Market on Charolette Pike here in Nashville.
Never tried them.

WHATTTTTTT-----I was hard up for food in 2002 when I lost my first job and my wife was in nursing school. I ate anything that swam besides carp, and some nights I just ate rice because we could not afford meet.  Why in the hell would you eat that carp or talapia in that matter.  Nothing against the folks that do, but eat redfish or snook or at the least a bass....Carp, eeesh I will sell papers before that.  Come to think of it I will not sell papers I would go wait tables and by some peter pan peanut butter.

Just convince the wealthy Asians that the high fat content and good color rank their meat as premium grade sushi......they'll be overfished, exported, and endangered in a couple of years.

I have heard from someone who tried it that cleaning them "boneless" is not anywhere near as easy as it's cracked up to be.  Apparently they are one big pincushion of bones.  I've never cleaned one, but I've cleaned buffalo, whose skeletons look like this: 

Their y bones have y bones.  If asian carp are anything like this, getting a boneless filet will be a challenge.

I've heard the meat is white and flaky (also like buffalo), but you almost have to run it through a grinder and make cakes out of it to deal with the bones. 

I'd like to snag one and try it for myself to see.

there's a trick -- thin score the fillets and it'll cook up great.

really. That radiograph doesn't even show the intermuscular bones.

I'm not yanking your chain. Asian carp with scored fillets, hot grease and beer = a very good time. Buffalo are a maze of bones. Asian carp have substantially less, but still quite a few. Even buffalo will fry up tasty if you score them right.

FYI- I was out on Old Hickory today around mid-lake (Avondale) and a TWRA officer came by posting a beware of "Invasive Species Asian Carp" sign next to the ramp.

This is the first time I have noticed this warning lake side.

Even buffalo will fry up tasty if you score them right.

The closest I've come to scoring with a buffalo was this big girl I met one night in a bar near MTSU.  :o
