So, my wife has agreed to let me brew again.   :o :o :o :o

Since the yungin' came along, she likes me closer to home.

So, my college roommate is coming in from Knoxville this weekend to give me a hand -- he's what I would consider a brewing "guide".  He's quite good and knows all the secrets.

Our recipe is a Roasted Coconut Cream Stout.  I'll have pictures posted on this thread for the next 8 weeks.  I'll try to do at least a weekly update.

after good homebrew most store purchased beer is just beer, this is my latest called Double IPA, most recipes call for 2 to 3 oz's of Hops, this one has 8. It is not officially ready until the 11th of Nov. but I just had to try it, sooothies brew I ever made. The next one to come out of the kitchen only has 17 oz's of Hops.  Tom, my fishing partner says you can't have enough hops, we will see ;D

My last IPA was awful.  Wwwaaaaaayyyyy too many hops.  I do like a good IPA, but this was just gross.  I was quickly reminded today at how expensive it is to brew a batch, so i hope not to screw this one up.

David, I am like you, I love hops. Taking it to the extreme, I occasionally enjoy Stone Breweries Ruination IPA.

I am seriously considering taking up home brewing but I haven't taken the plunge yet. Somebody needs to encourage me.  ;D

Steve, I have more information that you could ever possibly want on home brewing.  If you like BSing at the fly shop you should head over to All Seasons Garden & Brewery supply on 8th Ave.  Ask for Eric and proceed with the BS.  I spent almost 2 hours over there yesterday dissecting a recipe in an attempt to make it my own.

Rule 1 when starting -- follow the recipe.  I took too many liberties early on before I got into it and wasted a lot of money on bunk beer.
Rule 2 -- become one with the glass container.  Many kits come with 5 gallon buckets (food grade), but plastic will eventually taint your flavor.  Buy a six gallon carboy and don't look back.
Rule 3 -- don't get cheap.  I don't plan to take it this far, but my college buddy has his own trailer with multiple boilers on it.  I looks like Mr. Wizard and Otis from the Andy Griffith show got together and had a great idea. ;D  As far as ingredients go, generally the cheaper they are and the older they are, the greater the risk of a crap product.

You know, I could keep making up these rules, but I think I'll just give you all a step by step update on how i'm doing with this batch.  I certainly don't know it all, but I know where to find the answers or who to ask.

Sam, that is great info and I know the place you are talking about on 8th Ave. I am going to do some reading later today after I get done with the things I have committed to do.

I love the hops as well!  Anyone tried the Dogfish Head 120 minute IPA?  They have a 60 minute and a 90 minute which are both great, and then the 120 which takes the hops over the top.  It is great, but a bottle can be split between 4 people...

I have a buddy in Spring Hill with a serious homebrew operation.  The last time I went over there he had 5 taps going, and 7 more varietals bottled for a total of 12 different types of beer.  About half are his own creations, and the other half are recipes he follows.  He orders a lot of stuff from a place in upstate new york that supposedly has the best of the best ingredients.

Here, Here!  That 120 IPA is the king of all IPAs.

We got started a little late yesterday, and due to the cold outside temps, it took a long time to get the wort to boil.  We got finished around 11 last night, so I'll try and post pictures today.

I checked on her this morning and she was gurgling away.  Only 6 more days until the secondary fermentation.

If you like very strong IPA the Maharaja is strong but it's a little to Malty for me.  Ruination is great.  Hop Devil is one of my fav.  Where do you guys typically go to pick up ha beers?  I have found frugal mcdougal's to be the cheapest.

grow yer own. Next winter when we go fishing you'll have to bring some home brews along. I had a buddy that was brewing some good beer but he just moved, brutal.

on a slightly related note i picked up a jar of CO made stomp yesterday. haven't tried it yet. i'll let you guys know if it blinds me

So, here’s the steps I documented so far:

Steep the grains in the water as it starts to boil.  This is similar to making tea.  I’ve used 3 gallons of water to mash the grains.




After the water boils, add the malt.  I like to use dry malt extract as it has a longer shelf life.  The liquid stuff generally gets skunky after only a short time.





I let this boil for about an hour, reducing by almost a full gallon.  After its done, I I add another 3 gallons for a total of 5 gallons of wort.  This wort will ultimately become beer, but first, its gotta cool down before I add the yeast.
For the yeast, I chose liquid yeast.  I’ve found that the liquid stuff works much more efficient and can even cut the primary fermentation cycle in half.



I let it start with a pound of malt a few days before I started making the wort.  Now its ready to be added to the wort.





Here it is in the initial stage.  I’ve got a blow off tube because the liquid yeast can be known to react violently.



After two weeks I added the roasted coconut.



I’ll be ready to bottle next weekend!  I’ve thought about priming with honey, but that’s a gamble – I can’t be sure how much sugar it has.

lookin good...  you dont have to start the yeast on a pound of malt though.  With those activator pouches you don't have to do anything, but smack it, wait a few hours and add it straight in.

Roasted cocunut?  I'm interested how that shows up in the overall flavor.  What hops were used?
